Our company Sasala Dining Group was founded in 1886 and headquartered in Saitama Prefecture. We are a company that operates restaurants centering on Japanese cuisine, including Japanese restaurants, buckwheat noodle restaurants, and Japanese-style ramen restaurants. Originally, Hinodeya Shokudo was just one restaurant in rural Saitama, but through my experience of working overseas in Europe and the U.S. in my 20s and 30s, I realized the uniqueness of Japanese food in the world （ the concept of umami and dashi ） and the excellence of cooking techniques, and I have been working on the development of such a restaurant. In 2016, Hinodeya entered the U.S. market and began operating in San Francisco's Japantown.
