Hinodeya is a Japanese-style ramen restaurant created by the fourth generation head of Hinodeya, who trained at a top-class Ryotei restaurant in Ginza, using the techniques of Japanese cuisine. This fine pure Japanese soup is made by combining chicken with a base of high quality bonito and kelp used in Japanese cuisine, and then adding the flavor of scallops. We expanded to San Francisco in 2016 with the goal of creating world-class ramen that takes advantage of this unique Japanese taste of dashi soup stock ・ and its delicious flavor. Please come and enjoy a bowl of our specialties.
