Potato latkes by Simply Recipes [ https://www.simplyrecipes.com/recipes/potato_latkes/ ]
This year, the Jewish holiday of Hanukkah will be celebrated from Sunday, Dec. 14 to Monday, Dec. 22. During the eight days of Hanukkah, one candle is lit each night to commemorate the miracle of one night's worth of oil lasting for eight during the Maccabean Revolt, according to the Talmud. For this reason, Hanukkah is celebrated with foods fried in oil, such as Potato Latkes [ https://www.simplyrecipes.com/recipes/potato_latkes/ ]. This recipe for the crispy potato pancakes requires a food processor and a cheesecloth.
